Taking pointers from a wonderful Food Network Chef, I made this Braised Chicken dish with Mushrooms and Almonds. Wow, is all I can say. The pancetta and perfectly sweated onions combined with fresh thyme and basil mixed with buttery button mushrooms and the sauce. The sauce! White wine, chicken stock and almond paste – what can I say? This is a winner. Served on top of sauteed Haricots Verts to make it healthy.
